Eating where the locals actually eat

Reservations are easy. Belonging in the room for an hour is the harder, better thing.

Go early in the trip, not late

Eat the local, unglamorous, deeply regional food in the first days while your palate is still curious. Save the celebrated kitchens for later, when you have the context to understand what they are refining.

Ask a better question

Rather than asking where the best restaurant is, ask where someone ate last Sunday with their family. The answer is usually smaller, cheaper and far more memorable.

Learn six words

Hello, please, thank you, delicious, more, and the word for the local speciality. It is a small courtesy that changes the temperature of a room, and it opens doors that no booking system reaches.
